Nashville: Hot chicken homeland

After ditching fine-dining in Sydney, Kiwi-born Morgan McGlone wound up in Nashville, TN. It was there, during a stint as Chef De Cuisine of the acclaimed Husk, he discovered the city’s bona fides as the home of 'Hot Chicken'. So taken with the curious combo of taste-bud torching and tenderness, Morgy figured he'd found his true calling...

Fitzroy: A Neighbourhood legend is born

Officially opening in Fitzroy in August 2014, Belles' crave-worthy chicken, great booze, vinyl-friendly soundtrack and legendary parties quickly proved to be a pretty damn good recipe for success. Growing from a cult favourite to a neighbourhood mainstay, the original Gertrude St restaurant is still as much a vibe as it ever was.

Sydney: Belles goes big, harbour city style

It wasn’t long before Sydney demanded a taste of the action too. Kicking off with what was to be a 9-month pop-up in waterside Barangaroo, it soon became clear the harbour city wasn’t going to let go of a good thing that easy. The canteen-style spot became permanent, followed up by a table service joint in the Glebe Tramsheds precinct.

Pop-Ups: Fam and friends from near and far

Countless food-world collabs, natural wine parties and surprise appearances over the years have been instrumental in adding fuel to the Belles' fire. From pop-ups with Noma in Copenhagen, to appearances on Action Bronson’s ‘F@#k That’s Delicious’, the opportunity to play alongside some of the culture’s most influential has made for a slew of great stories (as well as a few sore heads!) along the way.

Today: The original vibes & spices roll on

With food, bev and lifestyle collabs always in the works, Belles Hot Radio streaming on the speakers, Original Draught on tap plus the odd party or two to kick off, there’s always something around the corner for our Belles lovers. We're still owner/operated with a massive passion for the same delicious chicken, great booze, people and damn good vibes that got us this far in the first place.
